Serves 10 servings

Ingredients for the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, enough for 10)

200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

For the Cordial: Combine all the items in a pan, heat until it reaches a light boil, agitating to dissolve. After that, take off the heat allowing it to cool down entirely. Decant into an sterilised bottle, close it keeping it chilled, where it will keep for up to one month.

Preparing the Cocktail Base: Pour the specified spirits and syrup in a sizeable container, leave to sit for one hour, then pass it through , ideally through cheesecloth, making it fully clarified.

For serving: Add 85ml of the premix to a stirring glass containing ice, and stir carefully for one minute to cool it down. Filter to a frosted cocktail glass or similar, decorate with some cranberries and finish using a quick spritz with the mandarin essence over the top.
